Often this is mozzarella, suluguni or provolone can also be used. From vegetables, juicy tomatoes and green onions are preferred. Required:
- slices of white bread – 10 pcs.;
- mozzarella – 20 – 30 small pieces;
- tomatoes – 1-2 pcs.;
- basil – 0.5 bunch;
- spices to taste;
- olive oil – 2 tbsp. l.
Cooking:
- Drizzle slices of bread with olive oil;
- Place the bread on a grill pan or baking sheet. The frying surface does not need to be oiled.
- Cut the tomato into rings or half rings, depending on the size of the vegetable.
- Grind the basil, add herbs and spices to the tomato, mix.
- On top of each slice of bread, lay out a few slices of tomato, a slice of cheese, again a few slices of tomato.
- Place the container with the blanks in the oven for baking. Cook until bread and cheese are browned.
Bruschetta two cheeses
What could be better than the taste of cheese in an Italian dish? Of course, the taste of double cheese, as well as a combination of two popular varieties. It is this rich taste that distinguishes cheese bruschetta. This recipe can be made at home in just 30 minutes.
Required:
- slices of white bread – 10 pcs.;
- cream tomatoes – 2-2.5 pcs.;
- slices of provolone – 10 pcs.;
- mozzarella slices – 10 pcs.;
- basil – 0.5 bunch;
- spices to taste.
Cooking:
- Cut the tomatoes into thin slices, chop the basil. We combine the ingredients, add spices. This filling is best emphasized by the taste of a pinch of garlic powder, white pepper and dried oregano.
- Lay the slices of bread on the grill pan. The surface of the pan (if not, then the baking sheet) is left dry, without oil.
- On each slice lay out the tomato filling and a slice of each type of cheese.
- Bake in oven until cheese is melted.
Bruschetta with slices of prosciutto

- white bread – 10 slices;
- olive oil – 2-3 tbsp. l.;
- garlic – 1-2 cloves;
- arugula – a bunch;
- prosciutto – 20-30 thin slices.
Cooking:

- Wet with drops of olive oil.

Required:
- baguette – 1/2 pieces;
- canned tuna – 1 can;
- tomato – 1-2 pcs.;
- olives – 10 pcs.;
- hard cheese – 50 gr.;
- red onion – 0.5 pcs.;
- garlic – 3 cloves;
- parsley – a couple of branches;
- spices to taste.
Cooking:
- Cut half of the baguette into slices 1 cm thick.
- Dry in a pan or in the oven until golden brown, after sprinkling each with olive oil.
- Cut the tomato into medium-sized cubes, chop the garlic, combine.
- Add spices (salt, pepper, oregano) to taste.
- Separate the parsley leaves from the stem.
- Cut the onion into thin half rings, mix with a few drops of lemon juice.
- Chop the olives into rings, grate the cheese on a coarse grater.

Bruschetta with squid pieces
This dish will delight you with a range of Mediterranean flavors. Fragrant squid, crispy baguette, spicy chili peppers – you will definitely like this bruschetta. The recipe at home is prepared before serving on the festive table.
Required:
- white bread – 10 slices;
- squid – 4 pcs.;
- tomatoes – 2-3 pcs.;
- chili – 2 small pods;
- garlic – 2-4 cloves;
- lemon – 1 pc.;
- olive oil – 2 tbsp. l.
Cooking:
- We cut the baguette into slices diagonally up to 2 cm thick.
Fry the slices in a grill pan without using oil. You can also dry it in the oven or in a regular frying pan. - Cooking squid. If these are carcasses, we clean them, remove hard particles.
- If these are rings, defrost, dry. Cut the squid into small rectangles. On one side, we make neat cuts with a mesh with a knife.
- Cut the chili into small pieces. For those who like piquancy without spiciness, we suggest replacing hot peppers with bell peppers.
- Mince garlic, grate lemon zest. Combine with pieces of squid, pepper and olive oil, mix.
- Fry the resulting filling in a hot pan for 1-2 minutes.
- Long frying will make the squid tough, so it’s important not to overcook. Let’s cool down a bit.
- Put the tomato filling on the prepared slices of bread, and squid on top. Salt, pepper to taste, serve.
Bruschetta with squid and caviar
Crispy bun, sweet aftertaste of squid and salted caviar make the taste of such bruschetta piquant. The recipe at home can be prepared as a breakfast or snack on the festive table. Such a dish will emphasize the mastery of the hostess, being prepared in a few minutes when the guests are “on the way”.
Required:
- slices of bread – 10-12 pieces;
- peeled boiled shrimp – 0.5 kg .;
- ricotta – 200 gr.;
- mayonnaise – 50 gr.;
- Dijon mustard – 1 tbsp. l.;
- caviar – 150 gr.;
- butter – 2 tbsp;
- fresh dill – 0.5 bunch;
- spices to taste.
Required:
- Toast the bread slices in a dry frying pan until golden brown.
- Shrimp cut into pieces, while leaving 1 whole for each bruschetta for decoration.
- Separate a few stalks of dill for decoration, chop the rest of the greens.
- We coat the sides of the bruschetta with butter and dip them in chopped crop to make a beautiful green edging.
- Shredded shrimps marinate in mayonnaise mixed with mustard.
- Add ricotta to taste with salt and pepper, beat with a mixer to get an airy mass.
- Brush each slice of toasted bruschetta with a thin layer of ricotta.
- Spoon chopped shrimps with a spoon. On the side, lay out a slide of caviar with a teaspoon. On the opposite side – a whole shrimp.
- We decorate the bruschettas with sprigs of dill without stems and serve with white wine or champagne.
