How to cook chak-chak in Tatar style
Chak-chak, prepared in Tatar style, looks like a hill of golden nuts, as the dessert is poured with hot honey syrup.
Ingredients:
- chicken eggs – 4 pcs.;
- honey – 200 gr.;
- premium flour – 400 gr.;
- soda – 1/2 tsp;
- sugar – 1 cup;
- salt – 1/2 tsp;
- frying oil.
Dough preparation
Crack the chilled eggs into a deep bowl. Add salt, soda and half the sugar. Mix everything and beat thoroughly. The mass should be homogeneous and airy, so it is better to use a mixer.
Sift the flour and parts, slowly, introduce it into the mass. Thoroughly knead the dough after each serving. It should be soft, tender, and should not stick to your hands. Wrap the finished dough in a film and leave on the table for 10-15 minutes.
For convenience, divide the dough into 2-3 parts. Sprinkle flour on the work surface of the table and roll out the parts of the dough alternately into a thin sausage 1 cm thick. Cut the sausages into 1.5 cm pieces with a sharp knife.
Sprinkle all the pieces generously with flour so that they do not stick together. Leave them to stand for 25-30 minutes so that the dough dries out a little.
Preparation of honey syrup for chak-chak step by step
In a saucepan put the remaining half of the sugar and all the honey. Bring the mixture to a boil, stirring constantly. Then reduce the heat and continue to boil the syrup for another 9-10 minutes.
[sidebar #1] Pour vegetable oil into a deep saucepan or deep fryer and heat well, reduce heat to a minimum. Insert a deep-frying net or slotted spoon into the container and put some of the dough blanks into the oil.
In order for the pieces of dough to brown evenly, periodically perform circular movements with a grid. Take out the pieces when they are covered on all sides with a beautiful golden color. But before that, shake well over the grid, removing excess oil residue. Ready balls should remain dry.
Put the golden balls in a deep bowl and deep-fry the next portion. When all the pieces are fried, pour the finished syrup into them, stirring with a spoon. Lay the balls poured with syrup in the form of a slide with wet hands on a large flat dish.
Pour the remaining syrup over the chak-chak. A large chak-chak in Tatar is ready.
Chak-chak recipe without eggs
Ingredients:
- sugar – 150 gr.;
- sour cream 20% – 200 ml;
- honey – 50 gr.;
- salt – a pinch;
- premium flour – 450 gr.;
- peeled walnuts – 200 gr.;
- water – 100 ml;
- vegetable oil for frying.
Put sour cream in a deep bowl, add a pinch of salt and sifted flour. Knead the dough, carefully mixing in the flour. The dough should become tender, soft, not sticky to your hands. Cover the dough with a towel and set aside.
To prepare the syrup, pour sugar into a saucepan, pour in water and dissolve the mass until smooth over low heat, stirring often. When the sugar syrup boils, boil the water for 20 minutes. After that, reduce the heat to a minimum and add honey to the syrup. Stir until smooth and remove from heat. Do not boil the syrup with honey.
Chop the walnuts into medium-sized crumbs and place in a deep bowl. Roll out the dough into a thin layer 3 mm thick and cut into strips of 4 cm. Sprinkle with flour and fold in a pile for easy cutting of strips. Mix the chopped noodles, shaking off the excess flour.
Heat oil in deep fat, put a small amount of prepared noodles into it. Stir occasionally and fry until light yellow.
Put the finished noodles on a napkin to drain excess oil. Combine crispy strips with nuts and mix everything gently. Then pour the sweet syrup into the mass and mix again.
Wet your hands with cold water, take a small amount of noodles, put them in a pile on a flat plate for serving. Top with the rest of the syrup and serve.
Chak-chak recipe in Bashkir
This is a traditional festive dessert of the Bashkir people served on holidays instead of a cake.
Ingredients:
- eggs – 2 pcs.;
- flour – 2 cups;
- vodka – 30 gr.;
- sugar for dough – 1 tbsp. l.;
- sugar for syrup – 100 gr.;
- natural flower honey – 300 gr.;
- salt – 1 pinch;
- odorless sunflower oil for frying – 1 cup.
Freeze the eggs slightly before cooking, so the chak-chak will turn out to be especially airy. Crack ice eggs into a glass bowl. Beat the eggs thoroughly with a mixer. Add cold vodka to the egg mixture. It will serve as a baking powder. Add sugar for dough and salt. Mix the mass with a whisk. Pour the flour into glasses, mixing thoroughly each time the dough.
Knead the dough with your hands into a ball and cover with a bowl for 30 minutes. Roll out the rested dough and divide in half. Sprinkle the work surface with flour. Roll out the dough into a layer of medium thickness and cut with a knife into ribbons, and then into strips. Remove excess flour from straws with a sieve.
Heat a frying pan with sunflower oil well. Fry the dough in small portions in boiling oil. Stir the straw several times during the frying process. Remove the finished straws with a slotted spoon on a paper towel, then transfer to a bowl.
Prepare honey syrup. In a saucepan, combine honey and sugar, melt and boil lightly until light foam, stirring regularly.

Pour the fried straws of dough with hot honey syrup and stir. Transfer straws in syrup to a serving dish and form a slide with wet hands.
A quick recipe for chak-chak corn sticks
Ingredients:
- corn sticks – 1 small package;
- butter – 150 gr.;
- condensed milk – 200 gr.;
- peeled walnuts – to taste.
Butter cut into small pieces and put in a saucepan, add condensed milk. Put the mass on a small fire. Stirring, bring to the melting butter. Cool the prepared filling.
Add corn sticks to a container with impregnation and mix well. You can use a large deep bowl, add the sticks to the bowl and pour in the sweet cream. Thoroughly and carefully mix all the sticks with condensed milk.
Choose a suitable flat dish and put soaked sticks on it in a slide. Sprinkle chopped walnuts on top. Send the dessert to the refrigerator for a couple of hours. Quick chak-chak from corn sticks is ready.
Chak-chak recipe with condensed milk
Ingredients:
- wheat flour – 250 gr.;
- eggs – 2 pcs.;
- condensed milk – 1 can;
- sugar – 1 tbsp. l.;
- salt – a pinch;
- water or milk – 65 ml;
- butter – 15 gr.;
- vegetable oil – 250 gr.
Beat eggs with sugar until light with a mixer. Sift the flour into a deep bowl, add the beaten eggs with sugar and mix everything.
Melt the butter and add to the dough, pour water or milk into the same place. Knead the dough with your hands, it should become soft, not sticky to your hands. Put the dough to rest in the cold for half an hour.
Dust a work surface with flour and divide the dough into several pieces. From each roll out a layer 0.5 cm thick. Cut the layer with a sharp knife into thin strips and divide them into two or three parts.
Heat vegetable oil in a heavy bottomed saucepan. Put the plates in oil and fry until golden brown. Put the finished strips on a napkin to drain excess fat.
Mix condensed milk with fried strips of dough in a cup. Leave for a while so that they are well saturated with condensed milk.
Spread the soaked strips of dough on a large flat dish, forming a slide. Chak-chak with condensed milk is ready.
Chak-chak homemade: a step by step recipe
Dough Ingredients:
- chicken egg – 4 pcs.;
- vodka – 2 tbsp. l.;
- wheat flour – 400 gr.;
- salt – 1/2 tsp;
- sugar – 1 tbsp. l.;
- vegetable oil for frying – 300 gr.
Filling Ingredients:
- honey – 4 tbsp. l.;
- sugar – 5 tbsp. l.;
- hazelnuts for decoration – 200 gr.
Beat the eggs with a mixer. Take a deep bowl and pour flour with salt and sugar into it. Add beaten eggs to flour, mix, pour in vodka. Knead the dough until it stops sticking to your hands. At the end, sprinkle the dough with a little flour and wrap it in a plastic bag. Put it in the refrigerator for half an hour.
Take out the dough. To make it convenient to work, cut it into pieces and roll into cakes 2 mm thick. Cut the cakes into strips 2×0.5 cm. Leave the strips to approach on the table for 10 minutes.
Heat vegetable oil in a cauldron. Put the strips into it in small portions, as the dough increases in volume by 3 times. Get the finished pieces with a slotted spoon, draining the oil as best as possible.
Melt the honey in a saucepan over low heat, stirring constantly. Add sugar, stir and wait until it boils, boil for 7 minutes while boiling, also stirring often. Remove from fire.
Pour the honey filling into the fried pieces of chak-chak and mix gently so that all the strips are saturated with sweet syrup. Dip your hands in cold water and put the chak-chak on a wide large dish in the form of a slide, tamping the pieces. Decorate the dessert with hazelnuts on top.
How to cook chak-chak in the oven
Dough Ingredients::
- flour – 300 gr.;
- sugar and salt – 1 tsp each;
- eggs – 2 pcs.;
- milk – 4 tbsp. l.;
- butter – for lubrication.
Syrup Ingredients:
- honey – 1 tbsp.;
- sugar – 100 gr.;
- water – 2 tbsp. l.
Sift the flour into a deep bowl, heat the milk. Beat eggs into flour, add salt, sugar, milk. Knead the mass until smooth. Roll the dough into a ball and brush with warm butter.
Cut the dough into thin strips up to 3 cm long. Arrange them on a greased baking sheet. Bake in the oven for 15–20 minutes at 170–180°C. The straw will increase in size and become golden. Remove sticks and leave to cool.
Pour water into a small saucepan, put honey and sugar. Cook over low heat until boiling, then turn off and leave to cool for 5 minutes. Fold the finished straw into a deep cup and pour over the syrup. Mix everything and put on a dish with a slide. Serve dessert after the syrup has set.
