- 7-8 medium-sized apples;
- 150 g rye crackers;
- 200-300 g of sugar;
- 100 g butter.
Cooking:
- Peel apples from seeds, finely chop. Crush crackers.
- Lubricate the bottom of the pan (form) thickly with butter, pour about 75 g of crushed crackers. Put half of the finely chopped apples on top, sprinkle with sugar (100-150 g).
- Cut the butter into cubes (35-40 g) and put on top of the base. Create another row of breadcrumbs, apples and sugar, place the remaining pieces of butter on top.
- Preheat oven to 170 degrees. Close the pan (form) with the base for the pie with a lid and cover with heat-resistant foil. Place the dishes in the oven for 30-35 minutes. Remove as soon as the apples and crackers are soft and juicy enough. Let the charlotte cool slightly and transfer to a flat tray.

Charlotte with apples and cinnamon
Ingredients:
- 5-6 small apples;
- 1 glass of flour;
- 1 tsp cinnamon;
- 5 eggs;
- 5 st. l. Sahara;
- 1 st. l. starch;
- 1 tsp soda;
Cooking:
- Wash the apples, remove the core and cut into slices. Separate the egg whites from the yolks, mix with three tablespoons of sugar and beat with a mixer.
- Transfer the beaten egg whites to a glass. Combine the yolks separately with two tablespoons of sugar and mix thoroughly. Add flour, cornstarch, cinnamon and baking soda to bowl with egg whites.
- Add the yolks to the dough, mix well with a spoon, moving from the bottom up. Place the apple slices into the batter and mix again.
- Lubricate a baking dish with vegetable oil and sprinkle with breadcrumbs or semolina. Pour the batter into a baking dish and pour over the egg whites, spreading the mixture evenly over the surface with a spoon.
- Place the pie in the oven preheated to 180 degrees and bake for 35-40 minutes. Cool the finished charlotte slightly and transfer from the mold to a plate. Can be served at the table.
Apple charlotte with cream
Ingredients:
- 700-800 g of apples;
- 500 ml cream (20% fat);
- 3 eggs;
- 50 g butter;
- 1 glass of granulated sugar;
- 1 glass of flour;
- 0.5 tsp soda;
- a pinch of citric acid;
- a pinch of salt;
- 0.5 tsp vanilla sugar;
- 1 tsp dough baking powder.
Cooking:
- Pour the cream into a spacious container, add eggs, granulated sugar and beat with a mixer until a fluffy mass is obtained. Add vanilla sugar, citric acid and soda.
- Melt the butter and place in the dough base. Gradually add flour with baking powder and mix thoroughly.
- Peel the apples, remove the core, and cut into slices. Cover the form with parchment paper and grease with vegetable oil. Pour the bottom of the mold with half of the dough and spread over the surface. Put apples on top, add a little vanilla sugar and pour over the rest of the dough.
- Preheat the oven to 180 degrees and bake the cake for 30-35 minutes. Cool the charlotte, sprinkle with powdered sugar and serve.
Charlotte with apples in French
Ingredients:
- 200 g of stale white bread;
- 500 g of apples;
- 3 eggs;
- 0.75 cups of sugar;
- 1-1.5 cups of warm milk;
- 50 g walnuts or 3 tsp. lemon peel;
- 5 st. l. crushed crackers or cookies;
- 30 g of vegetable oil;
- 5 st. l. powdered sugar.
Cooking:
- Beat eggs with sugar, add warm milk, mix. Cut the bread (stale, but not dry) into small cubes or use a pack of store-bought crackers, pour over the egg-milk mixture, insist for 40-45 minutes.
- Grind nuts or zest, mix peeled and diced apples. Add to the swollen bread mixture.
- Grease a mold or a frying pan with butter, sprinkle with crushed crackers or biscuits. Place an even layer of the prepared mass on top. Press lightly and seal. Sprinkle with a small amount of walnuts or breadcrumbs, add 1-2 tablespoons of oil.
- Preheat the oven to 200°C, place the base on the baking sheet and cook for 30 minutes. Turn off the oven and let the cake rest for another 10-15 minutes. Take out the form, transfer the apple charlotte to a dish, sprinkle with powdered sugar. The dish is ready.
Charlotte with apples in the microwave
Ingredients:
- 500 g of apples;
- 150 g wheat flour;
- 4 eggs;
- 150 g of sugar;
- 100 g butter;
- 0.5 tsp salt;
- 1 tsp vanilla;
- 10 g cinnamon;
- 5 g of nutmeg;
- 5 g of soda;
- 10 ml lemon juice;
- 5 g of powdered sugar.
Cooking:
- Mix softened butter with granulated sugar, add eggs and beat with a whisk. Add flour, soda and mix thoroughly. As soon as the dough becomes completely homogeneous and smooth, place ground nutmeg, salt, cinnamon and vanilla in it, add lemon juice.
- Rinse the apples in running water, cut off the peel, remove the seeds and cut into medium-sized slices. Put on a plate, sprinkle with a little sugar and mix.
- Grease a microwave oven dish with butter and pour a small amount of dough into it, place several layers on top of the apples. Send the form to the microwave and, setting the power to 630 W, cook for 10-15 minutes.
- Wait for the charlotte to rise, take it out and check with a knife for readiness. If a raw core is found, bake for a few more minutes until complete. Transfer to a wide plate, cool slightly and garnish with powdered sugar. Serve with tea, coffee or other hot drink.

Charlotte with cottage cheese in a slow cooker
- 4 small apples;
- 350 g low-fat cottage cheese;
- 5 eggs;
- 280 g of sugar;
- 160 g flour;
- 60 g butter;
- 1 sachet of vanillin;
- cinnamon and powdered sugar to taste.
Cooking:
- Break the eggs into a deep bowl, add a glass of sugar and beat with a mixer for five minutes. Add the sifted flour and stir to make a smooth dough.
- Separately grind 50 g of butter aged to room temperature with vanilla sugar. Add cottage cheese, vanilla and mix until smooth.
- Wash, peel and cut apples into slices. Grease a baking dish with the rest of the butter. Put half of the apples and pour half of the dough. Place cheese filling on top.
- Lay out the rest of the dough and apples. Sprinkle the pie crust with cinnamon. Place the charlotte with apples and cottage cheese in a slow cooker and bake for 60 minutes, setting the “Baking” mode. Take out and shift the finished cake, decorate with powdered sugar and serve.
Charlotte with apples in a bread machine
Ingredients:
- 2 large or 4 small apples;
- 5 eggs;
- 250 g sugar;
- 250 g flour.
Cooking:
- Wash the apples and cut off the skin from them. Remove the core and cut the flesh into slices. Break eggs into a bowl, add sugar and beat with a mixer at medium speed. Sift flour into mixture.
- Place the sliced apples on the tray of the bread machine, after brushing it with butter or sunflower oil. Thoroughly mix the dough and put on top of the apples.
- Select the “Baking” program in the bread machine menu and set the cooking time to 1 hour. When you hear a beep at the end of the process, carefully remove the apple pie, put it on a plate, cool slightly. The dish is ready.
Chef’s Apple Banana Pie
Ingredients:
- 4 large green apples;
- 2 bananas;
- 1.25 cups of flour;
- half a pack of butter;
- 1 st. l. sugar (with a slide);
- a pinch of salt;
- 3 art. l. cold water;
- 1 sachet of vanillin;
- 20 g caramel sugar;
- 1/3 cup rum.
Cooking:
- Start by preparing the biscuit base by beating flour, 5-6 tablespoons butter, 2 teaspoons sugar and a pinch in a food processor or mixer until crumbly. Pour in cold water and beat for a while.
- Transfer the dough to a cutting board and shape into a ball. For convenience, you can add a couple of tablespoons of flour. Wrap the workpiece in cling film and refrigerate for an hour.
- After the dough is ready, preheat the oven to 190 degrees. Roll out the dough and transfer to a pie dish. Create a small side from the workpiece and make several holes with a fork, covering everything with foil. Lubricate the shiny base of the foil, which will be in contact with the dough, with butter. Press the foil firmly onto the dough and put the mold in the oven for 15 minutes, then remove and cool slightly.
- Cut two apples into thin slices. Melt the remaining butter in a frying pan, put the chopped apples on top, add vanillin and caramel sugar. Cook over high heat for two minutes, stirring constantly.
- Add rum, chopped banana pieces and cook until apples are soft enough. Pour the filling onto the finished biscuit. Cut the rest of the apples and put on top of the filling, sprinkled with a tablespoon of sugar. Place the pie in the oven and bake for 10-15 minutes at 180 degrees until the apples are browned. After cooling the finished cake slightly, you can serve it to the table.
Charlotte with Apple Syrup and Cookies
Ingredients:
- 15-20 pcs. biscuit cookies;
- half a pack of butter;
- 100 g of sugar;
- 5 green apples;
- 50 g butter;
- 3 art. l. ground cinnamon;
- 150 ml of water;
- 150 ml of apple juice;
- 50 ml of honey.
Cooking:
- Peel apples and cut into small cubes. Melt the butter in a saucepan, put the apples on top, sprinkle with sugar and cinnamon. Simmer over low heat for 10-15 minutes, until the apples are soft enough and begin to release juice.
- Fill a small saucepan with water, add apple juice, honey and cinnamon. Boil over high heat for 10 minutes until syrupy, leave to cool.
- Dip each cookie (half of the total) in the syrup for a few seconds and place on a greased baking sheet. Sprinkle with sugar. Put the apple base in the middle, place the remaining cookies on top, also soaking in syrup.
- Send the workpiece to an oven preheated to 180 degrees for 25-30 minutes. After browning the charlotte, remove the finished cake, cool slightly, invert onto a plate and sprinkle with powdered sugar. You can have a tea party.
