In Soviet times, low-fat, cheap, heavily salted fish was used to cook herring under a fur coat. After all, only such a product could then basically be bought in a store. Today, such a salad is most often prepared with fatty, spicy, salted herring. In this case, the herring under a fur coat turns out to be much more tasty and satisfying.
Herring under a fur coat: a classic recipe
It was this herring that Soviet housewives prepared for the New Year and other holidays in the last century.
Ingredients:
- 1 large herring;
- 4 potatoes;
- 1 onion;
- 5 carrots;
- 3 beets;
- some green onions;
- fat mayonnaise.
Wash potatoes, carrots and beets and boil until tender. It is better to cook beets separately, otherwise carrots and potatoes may stain.
While the vegetables are cooking, remove the skin, fins and entrails from the herring. Separate the fillet from the bones. Remove all small bones from the fillet. Cut the herring into small pieces and place in a bowl.
Peel the onion and chop finely. Peel boiled potatoes and carrots. Grate potatoes and beets on a coarse grater, carrots on a fine grater.
Put half the potatoes in an even layer on the bottom of the salad bowl and grease it with mayonnaise. Lay on top of ½ part of the herring and sprinkle the fish with onions. Spread everything again with mayonnaise.
Put half of the carrots and beets, spreading both layers of sauces. Repeat the assembly of layers in the same sequence. Sprinkle the salad on top with chopped green onions.
Herring recipe under a fur coat with an egg
Ingredients:
- 1 fatty herring;
- 2 carrots;
- 1 onion;
- 3 eggs;
- 2 potatoes;
- 1 beet;
- greens, mayonnaise.
Boil the vegetables until cooked right in the peel, peel and grate on a coarse grater. Hard boil eggs. Grate two of them on a coarse grater, one – set aside. Subsequently, this egg will be used for decoration.
Clean the fish, cut off the fins and remove the skin-film. Separate the fillet and cut it into small pieces.
Coat the bottom and walls of the salad bowl with vegetable oil. This is necessary so that the herring under a fur coat will later be easier to lay out on plates.
Lay one grated potato in an even layer on the bottom of the salad bowl. Cover the layer on top with a thin mesh of mayonnaise.
Put a layer of herring on top of the potatoes, and then onions. Lubricate everything with mayonnaise. Lay the carrots and the second layer of potatoes. Cover both layers with mayonnaise mesh.
Sprinkle salad with eggs and brush with dressing. Put a thick layer of beets on top and use mayonnaise again.
The salad prepared according to this recipe should definitely be kept in the refrigerator for impregnation for at least 5-6 hours.
Herring under a fur coat with apples
Ingredients:
- 1 beet;
- 2 carrots;
- 1 onion and an apple;
- 8 potatoes;
- 1 herring;
- mayonnaise.
Wash and boil vegetables. Thoroughly clean the herring and rinse from the inside. Separate the fillet and cut into small cubes.
Peel the onion and chop finely. Grate the rest of the vegetables on a coarse grater. Grate the apple on a medium grater.
Put the fish on the bottom of the salad bowl. Put onions on top of the herring, and then apples. Spread the apples over the onions as evenly as possible.
Spread the grated potatoes evenly over the apple and lightly compress the lettuce. Lubricate this layer generously with mayonnaise.
Put a carrot on top of the potatoes and grease everything with mayonnaise again. Put the beetroot in the last layer and grease with the sauce.
Salad variant with pickled cucumber
Ingredients:
- 2 small herrings, carrots, onions, pickles, apples;
- 4 potatoes and eggs;
- pepper, mayonnaise.
Wash vegetables and boil in their skins. Hard boil the eggs and peel everything. Cut the potatoes into small cubes and put in a salad bowl with the first layer.
Put very finely chopped onions on potatoes and grease everything with mayonnaise. Finely chop the cucumbers and lay on top of the onion.
Peel the herring, separate the fillet and chop it into pieces. Put the fish in a layer on top of the cucumbers. Lubricate the salad with mayonnaise and distribute it well.
Cut the eggs into cubes and put on top of the herring. Chop the carrots and put in the next layer. Distribute it so that no eggs are visible.
Lubricate carrots generously with mayonnaise. Peel the apple and cut into cubes. Lay the cubes on the carrots.
Rub the beets on a medium grater and lay the last layer. Lubricate the salad with mayonnaise. Sprinkle the finished “fur coat” lightly with ground black pepper. Put the dish in the refrigerator for 5 hours.
The original recipe for “fur coats” with waffle cakes
Ingredients:
- 400 g of herring;
- 2 beets and carrots;
- 4 eggs;
- 1 onion;
- 1 pack of wafer cakes;
- mayonnaise.
Boil beets and carrots until tender and grate on a fine grater. Hard boil the eggs and separate the yolks from the whites.
Grate egg whites on a fine grater. Peel the onion and chop very finely. Peel the herring, remove the backbone and separate the fillets from the bones. Cut the fish into small pieces.
Put the waffle cake on the tray. Evenly distribute the beets mixed with mayonnaise over it.
Cover the beets with the second cake. Put chopped herring on top of it. Put the third cake and spread the carrots mixed with onions and mayonnaise over it.
Distribute the grated squirrels smeared with mayonnaise over the fourth cake. Sprinkle the finished salad on top with grated yolk, decorate with sprigs of greens.
Vegetarian salad with seaweed
A feature of this version of the “fur coat” is that herring is not used at all for its preparation. In this case, the fish is replaced with algae.
Ingredients:
- 2 potatoes, carrots and beets;
- 1 small onion;
- a can of seaweed;
- mayonnaise.
Boil and peel vegetables. Soak the seaweed in cold water. Peel and finely chop the onion. Cut the potatoes into small cubes, grate the carrots and beets on a medium grater.
Grease the sides and bottom of the bowl with vegetable oil. Mix the beets with mayonnaise and lay out the first layer, distributing it not only along the bottom, but also along the walls of the bowl.
Mix carrots with mayonnaise and also put in a bowl, leaving a recess. Lay potato cubes in the next layer and also coat with sauce. Sprinkle onion over potatoes.
Lay the sea kale mixed with mayonnaise in the center in the hole formed on the salad.
Cover the salad with a wide dish and quickly turn over. Remove the bowl from the “fur coat”, coat the beets with mayonnaise and decorate with herbs and carrot slices.
Herring under a fur coat in lavash
Ingredients:
- 1 herring;
- 2 beets and carrots;
- 3 pita bread;
- 5 eggs;
- a bunch of greens;
- mayonnaise.
Boil beets and carrots and free from the peel. Hard boil eggs. Divide each oval sheet of pita bread into two parts.
Put foil on the table. Spread half of the pita bread on the foil. Lubricate it not too abundantly with mayonnaise.
Grate the boiled beets on a fine grater and spread evenly over the pita bread. Put the second half of the pita bread on top and grease it with mayonnaise. Distribute the carrot grated on a fine grater over this cake.
Put the third pita bread and miss. Sprinkle boiled eggs grated on a fine grater over its entire surface.
Put the pita bread again and pour finely chopped greens on it. On top of the greens, on the very edge of the cake, place pieces of finely chopped herring fillet.
Raise the edge of the pita with foil from the side of the herring. Roll the pita bread into a roll using foil. You should not start rolling the roll with your hands, otherwise it will crack.
Leave the roll in the refrigerator to soak directly in the foil for 30 minutes. Remove the foil from the roll and cut it into portions.
Herring under a fur coat with salmon
Ingredients:
- 300 g salmon;
- 2 beets;
- 1 carrot;
- 5 potatoes;
- greens, onions, mayonnaise.
Peel the onion and chop finely. Boil potatoes and carrots in their skins, peel and cut into cubes. Salmon also cut into small cubes.
Put the fish in the bottom of the bowl. Mix the onion with mayonnaise and put on top of the fish. Grate the potatoes and put on the fish. Spread potatoes with a little sauce.
Put the grated carrot on top and grease it with mayonnaise. Lay the grated beets on top of the carrots. Lubricate the beets with mayonnaise and sprinkle the salad on top with herbs.
Salad variant with mackerel
Ingredients:
- 2 potatoes and beets;
- 1 carrot;
- 4 chicken eggs;
- 1 mackerel and onion;
- 2 branches of parsley;
- 200 g mayonnaise.
Boil potatoes, beets and carrots, cool and peel. Grind vegetables on a medium grater. Boil eggs, peel and also grate.
Remove the skin from the fish and remove the bones from it. Separate the fillet from the bones and cut it into small cubes. Finely chop the onion.
Assemble the salad in the following order:
- potato;
- onion;
- mackerel;
- carrot;
- egg.
Coat all layers with mayonnaise. Put the final layer of beets. Lubricate the salad with mayonnaise. Decorate the dish with sprigs of greenery and pieces of eggs.
Herring under a fur coat with baked beets
Ingredients:
- 3 beets and carrots;
- 8 medium potatoes;
- 500 g of herring;
- 1 onion;
- 300 g classic mayonnaise.
Wash the beets and carrots, wrap in foil and put in the oven, heated to 180 ° C for an hour.
After an hour, remove the vegetables from the oven, unwrap and peel immediately. Place the eggs in a pot of cold water and boil for 10 minutes. from the moment of boiling.
Wash the potatoes and put in the microwave for 8-12 minutes. Peel potatoes and eggs.
Peel the herring, separate the fillet and finely chop it. Put the fish in the bottom of the bowl. Finely chop the onion and sprinkle over the herring. Lubricate the layer with mayonnaise.
Grate the potatoes on a medium grater and put on the herring. Also coat with sauce. Carrots also grate on a medium grater, put on potatoes and grease with mayonnaise.
Lay grated beets on top of all layers. Lubricate the salad with mayonnaise and decorate it with grated protein. Sprinkle grated yolk on top.
Herring under a fur coat with pancakes
Ingredients for making pancakes:
- 500 ml of kefir;
- 250 ml of milk;
- 2 eggs;
- 2 tbsp sugar;
- 1.5 tbsp flour;
- 1 tsp baking soda;
- 2 tbsp vegetable oil;
Filling Ingredients:
- 1 boiled beet;
- 2 herrings;
- 1 tbsp gelatin;
- some green onions;
- mayonnaise, water.
Knead dough for pancakes. Bake pancakes in a pan with vegetable oil. Chop the herring fillet into pieces. Boil the beets and grate. Mix herring, beets and finely chopped onions in a salad bowl.
To prepare the sauce, pour gelatin with a small amount of cold water. After the gelatin swells, transfer it to a water bath and warm it up well, without boiling.
Mix cooled gelatin with mayonnaise. Transfer the mass to the beets with herring. Let the ingredients stand.
Spread about 2 tsp of filling on the edge of each pancake and form a roller out of it. Wrap two edges of the pancakes inward and twist them into a tube.
